WHY DRIED BEANS? Dried beans are a great source of protein, allowing you to enjoy the garden's bounty in winter. I find that even the ability to cook them is becoming a dying art, but I assure you the flavors and varieties are well worth trying!! Be sure to cook all beans properly! Uncooked beans have a toxin in them, which will cause food poisoning if the beans are not prepared properly.
