WHY DRIED BEANS? Dried beans are a great source of protein, allowing you to enjoy the garden's bounty in winter. I find that even the ability to cook them is becoming a dying art, but I assure you the flavors and varieties are well worth trying!! Be sure to cook all beans properly! Uncooked beans have a toxin in them, which will cause food poisoning if the beans are not prepared properly. This article from the Richmond Times explains more. Common recommendations are to soak the beans for at least two hours, drain them, and then bring to a boil. Each bean has a different cooking time. Learn more from The Bean Institute,Bonappetitand Joy of Cooking about the best and safest ways to prepare your beans. Typically, once beans are slightly mushy, they are fully cooked.

Light Red Kidney Beans

These kidney shaped beans do very well in recipes that have a long cook time, like a good slow simmering chili!
